The 2021 Chablis Vaillons 1er Cru was severely affected by the frost this year, so there are just seven barrels and five feuillettes this year. It has a beautifully defined bouquet with fine focus and energy, honeysuckle and light crushed stone aromas. The palate is very intense with a killer line of acidity, taut and fresh with a twist of sour lemon on the finish. Excellent.

Chablis

Chablis, the northernmost Burgundy region, is famed for its crisp, mineral-driven Chardonnay wines. Unlike rich, oaky Chardonnays, Chablis wines, influenced by the cool climate and limestone-rich soils, feature vibrant acidity and flavours of green apple, citrus, and flint. Ideal with seafood, especially oysters, Chablis wines come in four appellations: Petit Chablis, Chablis, Chablis Premier Cru, and Chablis Grand Cru. Esteemed producers like Domaine William Fèvre, François Raveneau, and Vincent Dauvissat are known for their classic, terroir-expressive wines.
